Vanilla Flavored Ice –cream Tea
Ingredients for 8 helpings:
- 2 1/2 cups of milk.
- ½ a teaspoon of vanilla essence
- 2 teaspoons of black tea leaves ( or 2 tea bags)
- 2 eggs
- 6 spoons of sugar
- 1 small packet of sweet cream
- For decoration: ripe strawberries, nana (mint) leaves.
Preparation:
- Put the milk into a small pot, bring to the boil and then remove from the fire.
- Add the tea leaves (or tea bags) cover the pot and allow the tea to brew for 5 minutes.
- In the meantime, beat the whole eggs together with the sugar and the vanilla extract until a firm light coloured mixture is obtained.
- Strain the milk.
- Slowly pour the boiling milk into the eggs while beating rapidly.
- Put the mixture back into the pot and cook while stirring. Place the pot on top of another pot which is filled with boiling water. Continue stirring until the mixture becomes thicker and covers the spoon.
- Remove from the fire and allow to cool.
- Whip the sweet cream until a firm froth is obtained and stir gently into the cool mixture.
- Put the mixture in a cooking dish and freeze for at least 3 hours.
- Serve the ice-cream with fresh strawberries and nana (mint) leaves.
